Wine and Cellar Door

The Immerse vineyards are 25 years old and prduce fruit of intense flavour and consistently high quality. Four wines are made under the Immerse label -an Unwooded Chardonnay, Sauvignon Blanc, Pinot Noir and Shiraz Viognier. There is also a Reserve Shiraz and Reserve Chardonnay named after our beloved golden retriever, Oscar, who died of a snakebite in our vineyard. These are exclusive to Immerse and are only available to taste or purchase through our website & our cellar door.

In developing the wine, our first consideration was simply to make wines that people will love to drink - that means fresh and vibrant with lively fruit character and enough structure to ensure they stand the test of time. Our second criteria is to create wines that go wonderfully well with food as eating and drinking is a high priority at Immerse. After that, we've simply left it up to the fruit and the winemakers.

The ambiance at Cellar Door is warm and welcoming and our staff are trained to ensure your wine tasting experience is fun, educational and rewarding. All of the Immerse wines are available to purchase at the cellar door or by ordering online.

When visiting the Cellar Door you will also be able to have a look around our selection of produce some of which is exclusive to the Yarra Valley.

Non Vintage Immerse Sparkling Chardonnay

Light elegant sparkling, made from Chardonnay(80%), Chenin Blanc (15%)& Colombard (5%) grapes. With intense bubbles in the mouth & a subtle sweetness on the finish, this wine is an easy drinking style or will age for around 2-3 years. A wonderful afternoon wine aperitif.

2008 Immerse Unwooded Chardonnay

A hand picked delicate chardonnay. Crushed and gently pressed before transfer into stainless steel tanks to ferment slowly to retain the fresh varietal characteristics. Lifted by aromas of green apple and asparagus, the delicate palate of guava and spice complement the structure and balance of this wine.

2009 Immerse Sauvignon Blanc

Cool climate gooseberry, grassy and herbal characteristics flow through the palate with hints of pinapple and passionfruit. Has a firm finish with herbaceous asparagus flavours. A beautifully balanced wine made to be enjoyed now.

2008 Oscars Reserve Chardonnay

Our Oscar's Reserve Chardonnay was hand picked from our best fruit this year. It is a full bodied classic style chardonnay which is light gold in colour with a green hue. Delicate aroma of almonds with a hint of apricot. The palate is rich and evenly balanced, displaying mixed flavours of limes and grapefruit with a creamy mid palate. Matures for 9 months in French Oak, this wine will develop over the next 5 to 7 years.

2008 Immerse Pinot Noir

The palate is medium bodied with generous upfront fruit which has been complemented with silky smooth tannins that carry the flavours through to a tight finish. This wine is bright and youthful in appearence with a crimson hue while the nose has complax aromas of cedar and cherry.

2008 Immerse Cabernet Merlot

With a blend of 60% Cabernet and 40% Merlot the deep purple/red colour of this wine is vivid and lively due to maximum colour extraction while fermenting on the skins. Intense aromas of dark chocolate and blackcurrent notes are supported by the time spent in French Oak, with 20% of the Merlot in American Oak to add complexity.

2008 Immerse Shiraz Viognier

This Shiraz Viognier is bright vermillion in colour with a garnet hue, the nose being rich among mocha and a hint of vanilla. With the addition of 3% Viognier to the Shiraz, the ripe tannins and the exotic fruit flavour have come together to form a solid blend with a palate of dark fruit and a dash of dried apricots.

2007 Oscars Reserve Shiraz

Our Oscar's reserve Shiraz was hand picked from our best fruit this year, making this wine a rich, well balanced wine with long length. Deep rich purple hue & a mouth feel of dark cherry, mocha and spicy plum. Matured in French Oak for 21 months, this wine will develop over the next 6-8 years.
