Wine & Cellar Door

The Immerse vineyards are 25 years old and prduce fruit of intense flavour and consistently high quality. Four wines are made under the Immerse label -an Unwooded Chardonnay, Sauvignon Blanc, Pinot Noir and Shiraz Viognier. There is also a Reserve Shiraz and Reserve Chardonnay named after our beloved golden retriever, Oscar, who died of a snakebite in our vineyard. These are exclusive to Immerse and are only available to taste or purchase through our website & our cellar door.

In developing the wine, our first consideration was simply to make wines that people will love to drink - that means fresh and vibrant with lively fruit character and enough structure to ensure they stand the test of time. Our second criteria is to create wines that go wonderfully well with food as eating and drinking is a high priority at Immerse. After that, we've simply left it up to the fruit and the winemakers.

The ambiance at Cellar Door is warm and welcoming and our staff are trained to ensure your wine tasting experience is fun, educational and rewarding. All of the Immerse wines are available to purchase at the cellar door or by ordering online.

When visiting the Cellar Door you will also be able to have a look around our selection of produce some of which is exclusive to the Yarra Valley.

Non Vintage Immerse Sparkling Chardonnay Light elegant sparkling, made from Chardonnay(80%), Chenin Blanc (15%)& Colombard (5%) grapes. With intense bubbles in the mouth & a subtle sweetness on the finish, this wine is an easy drinking style or will age for around 2-3 years. A wonderful afternoon wine oraperitif.

2008 Immerse Sauvignon Blanc The ideal summer wine, pale straw colour with youthful green hues. Typical cool climate grassy, herbal characters flow through to the palate which is full and flavoured with hints of asparagus. This wine finishes with a green apple freshness which is crisp & clean.

2008 Immerse Unwooded Chardonnay A hand picked delicate chardonnay. Crushed and gently pressed before transfer into stainless steel tanks to ferment slowly to retain the fresh varietal characteristics. Lifted by aromas of green apple and asparagus, the delicate palate of guava and spice complement the structure and balance of this wine.

2006 Oscars Reserve Chardonnay SOLD OUT Only 100 cases of this handcrafted wine will be released, light / pale gold in colour with an aroma of essences of tree fruits complemented by vanilla and cashew. The palate has a rich and complex mouth feel with flavours of white peach and limes and finishes with a structured lingering finish.

2006 Immerse Pinot Noir SOLD OUT This Pinot Noir is light to medium bodied and has aromas of red berries and cherries. With a medium grain texture that lingers with beautiful spicy notes. The finish exhibits fine tannins and beautiful length.

2005 Starkers Cabernet Merlot A deep red colour with bright red hues this wine was blended to 65% Cabernet&35% Merlot. It is a full bodied wine that combines gently with a soft, silky texture and lovely long tannins that linger on the finish.

2007 Immerse Shiraz Viognier SOLD OUT 2007 Oscars Reserve Shiraz Our Oscar's reserve Shiraz was hand picked from our best fruit this year, making this wine well balanced with fine tannins, acidity & full fruit flavours. Deep rich purple hue & a full mouth feel of spice, dark cherry and mocha characteristics. Will develop over 6-8 years.
